This refreshing quinoa salad contains protein, fiber, and fresh Moroccan flavors. Perfect as a light lunch or a side dish, this recipe combines the nutty taste of quinoa with a zesty citrus dressing and aromatic herbs.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup red onion, finely diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup raisins (optional)
- 1/4 cup toasted almonds or walnuts
Dressing:
- Juice of 1 orange
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Instructions:
- Rinse the quinoa under cold water. In a medium saucepan, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
- Combine the cooked quinoa, parsley, cilantro, mint, red onion, cherry tomatoes, cucumber, raisins, and nuts in a large bowl.
- Whisk together the orange juice, lemon juice, olive oil, honey, salt, and pepper in a small bowl.
