Moroccan Chicken Tagine with Preserved Lemons and Olives

This classic Moroccan chicken tagine is a flavorful and healthy dish perfect for a wholesome dinner. The slow-cooked chicken absorbs the bright flavors of preserved lemons, green olives, and fragrant spices.

Ingredients:

  • 4 bone-in chicken thighs
  • 1 preserved lemon, quartered (or 1 fresh lemon, thinly sliced)
  • 1/2 cup green olives
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 2 tbsp olive oil
  • 1/2 cup chicken broth or water
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large tagine or heavy pot over medium heat. Add the chicken thighs, skin side down, and brown for 4-5 minutes on each side. Remove from the pan and set aside.
  2. In the same pan, sauté the onions and garlic until soft and golden.
  3. Add the spices (ginger, turmeric, cumin, and cinnamon) and cook for 1-2 minutes to release their aromas.
  4. Return the chicken to the pot, skin side up, and add the preserved lemon, olives, and chicken broth.
  5. Cover and simmer on low heat for 45-60 minutes until the chicken is tender and cooked through.
  6. Garnish with fresh cilantro and serve with whole-grain couscous or brown rice.
