This classic Moroccan chicken tagine is a flavorful and healthy dish perfect for a wholesome dinner. The slow-cooked chicken absorbs the bright flavors of preserved lemons, green olives, and fragrant spices.
Ingredients:
- 4 bone-in chicken thighs
- 1 preserved lemon, quartered (or 1 fresh lemon, thinly sliced)
- 1/2 cup green olives
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon
- 2 tbsp olive oil
- 1/2 cup chicken broth or water
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large tagine or heavy pot over medium heat. Add the chicken thighs, skin side down, and brown for 4-5 minutes on each side. Remove from the pan and set aside.
- In the same pan, sauté the onions and garlic until soft and golden.
- Add the spices (ginger, turmeric, cumin, and cinnamon) and cook for 1-2 minutes to release their aromas.
- Return the chicken to the pot, skin side up, and add the preserved lemon, olives, and chicken broth.
- Cover and simmer on low heat for 45-60 minutes until the chicken is tender and cooked through.
- Garnish with fresh cilantro and serve with whole-grain couscous or brown rice.
