Lemon Herb Grilled Chicken with Veggies

This simple and healthy grilled chicken dish is packed with flavor and lean protein. It’s perfect for those following a low-calorie or balanced diet, served with a side of grilled veggies.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 zucchini, sliced
  • 1 red bell pepper, cut into strips
  • 1 small onion, cut into wedges
  • 1 tbsp balsamic vinegar (for veggies)

Instructions:

  1. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Pour the mixture over the chicken breasts and marinate for at least 30 minutes in the fridge.
  2. Preheat the grill or grill pan over medium heat. Grill the chicken for 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F or 74°C).
  3. While the chicken is grilling, toss the sliced zucchini, red bell pepper, and onion with balsamic vinegar, olive oil, salt, and pepper.
  4. Grill the veggies for 3-4 minutes on each side until tender and slightly charred.
  5. Serve the grilled chicken with the veggies on the side for a healthy and balanced meal.
