Low-Carb Cauliflower Rice Stir-Fry

This light, low-carb meal is perfect for those following a ketogenic or low-carb diet. It’s loaded with veggies and seasoned with simple yet flavorful ingredients.

Ingredients:

  • 1 medium cauliflower, grated into rice-sized pieces
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 1 tbsp toasted sesame seeds (optional for garnish)

Instructions:

  1. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the mixed vegetables and stir-fry for about 5-7 minutes until tender but still crisp.
  3. Stir in the cauliflower rice and cook for another 5 minutes until the cauliflower is tender.
  4. Add soy sauce, sesame oil, salt, and pepper. Stir until evenly combined.
  5. Garnish with sesame seeds and serve hot as a side dish or light main course.
