Moroccan Quinoa Salad with Fresh Herbs and Citrus

This refreshing quinoa salad contains protein, fiber, and fresh Moroccan flavors. Perfect as a light lunch or a side dish, this recipe combines the nutty taste of quinoa with a zesty citrus dressing and aromatic herbs.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mint leaves, chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup raisins (optional)
  • 1/4 cup toasted almonds or walnuts

Dressing:

  • Juice of 1 orange
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
  2. Combine the cooked quinoa, parsley, cilantro, mint, red onion, cherry tomatoes, cucumber, raisins, and nuts in a large bowl.
  3. Whisk together the orange juice, lemon juice, olive oil, honey, salt, and pepper in a small bowl.
  4. Pour the dressing over the quinoa mixture and toss to coat evenly.
  5. Chill for 30 minutes before serving for the flavors to meld.
